Healthy New Summer Salsa Recipe!

We decided to offer a new family-friendly recipe this week that centers on food and not drink(we’ll get back to the latter on Friday). 

This is a favorite summer recipe of JoAnn Fabiano, our awesome new Zumba instructor. You can check JoFab’s class starting July 28th – it’s gonna be better than ever!!!

 

Cucumber Salsa

2 Cups Persian Cucumbers-finely diced. (you may substitute any other seedless cucumber)

 ½ Cup Red Onion-finely diced

 ¼ Cup Fresh Cilantro-chopped

 ¼ Cup Fresh Mint-chopped

 3 Tablespoons fresh lime juice

 1 Tablespoons Extra Virgin Olive Oil

 

Add Sea Salt and Coarse Ground Black Pepper for taste

 1.)    Mix cucumber, red onion, cilantro and mint in a medium bowl

2.)    Stir in lime juice and olive oil

3.)    Season with salt and pepper

4.)    Add more lime juice if needed for taste

Eat with Colored Pepper slices, Salsa Chips, and can put on as a topping for burgers and fish.

For a spicy version: ADD-1 small jalapeno pepper-finely diced. (Remember to wear gloves to dice pepper)
